3 inch piece of ginger, peeled and grated
2 C water, for boiling
2 Tbs dried elderberry
2 Tbs herbal berry tea with hibiscus or just hibiscus tea (this is completely optional but the berry tea really enhanced the flavor and the hibiscus gave it a beautiful color)
1/2 C unrefined sugar
Juice of 1 lemon
1 C ginger bug starter
Bring the ginger, elderberry, and tea to a boil. Reduce the heat and simmer for 10 minutes. Add the sugar and stir until dissolved and remove from heat. Allow the blend to cool for a bit and then pour into jar. Fill the jar with cool water but leave about 2 inches of space. Make sure that the temperature of the liquid in the jar is at least room temperature before adding the ginger bug (heat will kill all of the good bacteria and your drink will not culture). Add the ginger bug, give it a good stir, and place a lid on the jar. Allow the jar to sit on the counter for 2-3 days. Chill and enjoy!
